My first encounter with Iwa-san (岩央 泰) as he’s back in town for a short stint. Trained under the Kyubey stream at the Palace Hotel Kanesaka before opening his own one-starred shop in Ginza, the style is certainly classic Edomae. A rather quiet man, one can feel his intensity when watching him in action and the dishes delivered are all of the same consistent themes: classic, quality, no fuss. Brought along a few new ideas nevertheless and the one that wowed me most was the squid stuffed with white shrimps. Will certainly give our very own Sase-san a good run for his money if not for the fact that he’s only here as a guest chef every now and then. Check his next visiting schedule with the shop and do book it well in advance.
